5/11/2023 0 Comments Mashed potatoes and parsnipsSince Thanksgiving is less than 3 weeks away I’m sure you’re starting to collect holiday recipes on your Pinterest Boards and file recipes away for later use. I have actually made them three times already and have fallen in love with them so I know you will too! I recently served them with a Beef Bourguignon that I made with Bison and OMG sooo good! (cannot wait to share that recipe with you) Bring the water to a boil and simmer until vegetables are soft, 15 to 20 minutes. In a medium saucepan, cover the vegetables pieces with cold water. These are probably the creamiest mashed potatoes I have ever made and the most unique. Scrub parsnips and potatoes with a clean vegetable brush under running water and peel if needed. But when you add butter, a touch of milk, grated garlic, and chives they taste absolutely divine. Transfer the potatoes and parsnips to a bowl. Parsnips are a root vegetable and taste kinda like a cross between potatoes and carrots with a slight spiciness. Cover and steam until the vegetables are very tender when pierced with a small knife, about 15 minutes. It’s a great healthy way to put a slight twist on the classic mashed potatoes for your holiday dinner table. This Mashed Potatoes are all kinds of yummy and really easy to make. We can’t walk through life alone, it’s too hard. But we also need someone strong enough to call us up out of the “rubble” of life and challenge us to positive thinking. That can relate to the struggles we have and can support us in those struggles. We need someone who understands the things that we’ve been going through. The more I travel and meet up with the friends I’ve made through blogging the more I realize how much we as people need community.
